You may just recognize this chap as ‘Ray’ from Hugh’s River Cottage channel four show. What a very nice chap he is. A few of us went to see his demonstration recently on how to butcher an entire lamb carcass from whole down to all the different cuts of meat you find wrapped in plastic on your local supermarket shelves. Fascinating and a lot less horrifying than it sounds. Once we were over the shock we all got to sit down and tuck into some of Dorset’s finest local produce… delicious!!
