You may just recognize this chap as ‘Ray’ from Hugh’s River Cottage channel four show. What a very nice chap he is. A few of us went to see his demonstration recently on how to butcher an entire lamb carcass from whole down to all the different cuts of meat you find wrapped in plastic on your local supermarket shelves. Fascinating and a lot less horrifying than it sounds. Once we were over the shock we all got to sit down and tuck into some of Dorset’s finest local produce… delicious!!

P2120051For the best bloody marys in town you really need to use fresh produce. Pureed plum tomatoes, a sprig of celery, a great blend of herbs and spices including salt and pepper, Tabasco, Worcester Sauce, Cajun spices, some magic and a bit of secretness and our special dorset horseradish vodka… they really are good and only £6!

Fresh From The Sea – May 2008

P2120065We are very close to the beach so we can get amazing produce. Our specials board always has some nice local fish. We don’t use cod and we try to only use sustainable fish, ideally line caught. We’ve still got work to do on this before we can really rave about it.

Here is ‘Janusz’, one of our chef’s wondering what delights he can create out of a couple of rather surprised squid plucked from the sea. We’ve sold these now, but the vodka flamed lobster on tonight’s menu really does sound lovely.

Seasonal Produce Cocktails – May 2008

Our cocktail menu changes weekly to try and reflect the changing seasons in the same way as our food menu. When rhubarb came into season recently James got busy again with his giant boiling pot and started stewing it all down into a delicious rhubarb syrup affair.

Tasted amazing in our ‘rhubarb-tini’ mixed with Smirnoff black, lemon grass, fresh ginger, love, and lemon.

English strawberries have just come into season now and our ‘strawberry bulleit’ is delicious. Just need to work out what we can make with English Asparagus, cos that’s in season too!!
